Greek Marinade
16 oz. plain Greek yogurt
1 TBL. Chef James Seasoning Salt
1 TBL. Chef James 5 Pepper Blend
2 TBL. Chef James Greek Seasoning
Mix ingredients well. Use on chicken, pork, and seafood. Cover with marinade then refrigerate overnight, grill, broil, or bake works equally well.
Jerked Marinade
1 cup mango juice
1 cup papaya juice
1 TBL. Chef James Seasoning Salt
1 TBL. Chef James 5 Pepper Blend
1/4 cup Chef James Jerked Seasoning
Mix all ingredients together, pour over a slab of ribs or two, or a cut up chicken, and marinate for 24 hours. Grill low and slow for a serious taste of the islands. If you want a little less heat - use a teaspoon of Chef James 5 Pepper Blend instead of a tablespoon. Enjoy!
GREEK SALAD
1 Cup PLAIN GREEK YOGURT
1 TBL. CHEF JAMES GREEK SEASONING
1 tsp. CHEF JAMES 5 PEPPER BLEND
1 tsp. CHEF JAMES SEASONING SALT
PEEL, TAKE THE SEEDS OUT, AND DICE 3 CUCUMBERS
DICE 1 RED ONION
1 FLAT OF CHERRY TOMATOES
SLICED GREEK PEPERONCINIS, TO TASTE
MIX THE FIRST 4 FOUR INGREDIENTS TOGETHER, THEN POUR AND MIX WITH THE NEXT FOUR INGREDIENTS, LET SIT AT LEAST 2-3 HOURS - ENJOY!
BEST RIBS
This is a simple recipe, just take a slab of ribs, make sure they are skinned, then just put Chef James BBQ Rub on both sides. If you like a little more spice you can add a little of Chef James 5 Pepper Blend. Then wrap your ribs tightly in clear wrap, like Saran Wrap. Let them sit over night in your refrigerator, then cook them low and slow, I don't even add sauce. I hope you enjoy them as much as I do. The same process can be used on pork steaks, chicken, and beef brisket.
CHILI LIME SHRIMP
This - like any dish using my spices- is extremely easy, since each one of my spices is a recipe in its own.
Just take any good size shrimp, I like at least a 20-25 size, bigger is better, just toss them in a little olive oil, and then toss in the Chef James Chili Lime Seasoning, add a little at a time and sample a shrimp, add as much as you like to your taste, you can saute these about 2-3 minutes a side, or skewer them and grill, either way they are delicious. Enjoy!
